Did you know? Two very important women made legendary contributions to Champagne as we know and love it now? In 1805, Barbe Nicole Ponsardin Clicquot became a young widow at 27 and the first woman to lead a Champagne House. This strong business woman ran her company during war time, expanded considerably and was given credit for creating the A-frame rack used in the process where sediment from secondary fermentation settles in the neck of the bottles. Her intent was to make the Champagne wines "as clear, distinct and limpid" as possible. Madame Clicquot's personal motto was "only one quality, the finest".
In 1858, Jeanne Alexandrine Pommery took over her husband's business and then created her own Champagne House. Madame Pommery was the first to store champagne in the chalk tunnels that were quarries in the third century. But she is better remembered as the first person to blend the "Brut" Champagne. Madame Pommery noticed that the over dosage of sugar tended to mask the lively, delicate taste of the wine. She found a "dry" blend then an "extra dry".
Women and Champagne have had a long and romantic relationship throughout history. Another great woman in the business remarked that "Champagne is the only wine which leaves a woman beautiful after drinking it"--Mme. de Pompadour.
